I z trvanliv\u00fdch potravin se d\u00e1 ale p\u0159ipravovat z\u00e1bavn\u00e9 a zdrav\u00e9 j\u00eddlo.<\/b><\/p>\n<p style=\"text-align: right;\"><strong>Foto: Jan Strmiska<\/strong><\/p>\n<p><span style=\"font-weight: 400; color: #000000;\">Pro\u017e\u00edv\u00e1me n\u00e1vrat do dob, kdy potravinov\u00fd trh nebyl tolik globalizovan\u00fd a v zim\u011b lid\u00e9 nenad\u00e1vali, \u017ee nejsou dost kvalitn\u00ed raj\u010data, proto\u017ee nikoho ani nenapadlo to vy\u017eadovat. Neexistovaly ob\u0159\u00ed hydroponick\u00e9 farmy a zelenina a ovoce se skl\u00edzely zral\u00e9. V\u0161echno se konzumovalo \u010derstv\u00e9 nebo konzervovan\u00e9 kva\u0161en\u00edm, ne nezralost\u00ed.\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">\u201e\u010cerstv\u00e9\u201c potraviny jsou nakonec tak ne\u010derstv\u00e9, \u017ee tento pojem u\u017e ztratil smysl. Odborn\u00edk na mikrobi\u00e1ln\u00ed kultury <\/span><a style=\"color: #000000;\" href=\"https:\/\/www.youtube.com\/watch?v=zBWxE5rpMeg&amp;list=LLeUug2yJICPYVNuvO71iAFw&amp;index=12&amp;t=0s\"><span style=\"font-weight: 400;\">Petr Ry\u0161\u00e1vka \u0159\u00edk\u00e1<\/span><\/a><span style=\"font-weight: 400;\">, \u017ee m\u00e1 v laborato\u0159i n\u011bkolik let star\u00fd hamburger, kter\u00fd vypad\u00e1 st\u00e1le stejn\u011b. To u\u017e jste asi sly\u0161eli. Ale je\u0161t\u011b hor\u0161\u00ed je, \u017ee kdy\u017e se tento v\u011bdec sna\u017e\u00ed vyp\u011bstovat kvasinkov\u00e9 kultury na \u201e\u010derstv\u00e9\u201c zelenin\u011b ze supermarketu, jde to 100x h\u016f\u0159e, ne\u017e na zelenin\u011b ze zahr\u00e1dky. V obchodech nakupujeme mrtv\u00e9 j\u00eddlo. Mo\u017en\u00e1 je tedy \u010das vyu\u017e\u00edt dne\u0161n\u00ed epidemii pro zamy\u0161len\u00ed se nad t\u00edm, co vlastn\u011b j\u00edme a <strong>jak s minimem \u00fasil\u00ed dostat i z trvanliv\u00fdch potravin v\u00edc u\u017eitku.<\/strong><\/span><\/span><\/p>\n<h2><span style=\"color: #000000;\"><b>Mra\u017een\u00e9 je skv\u011bl\u00e9<\/b><\/span><\/h2>\n<p><span style=\"font-weight: 400; color: #000000;\">D\u00edky tomu, \u017ee se skl\u00edz\u00ed ve vrcholu zralosti, maj\u00ed mra\u017een\u00e1 zelenina a ovoce nakonec vitam\u00edn\u016f a \u017eivin v\u00edc, ne\u017e jejich \u201emodern\u011b\u201c dozr\u00e1van\u00e1 nesez\u00f3nn\u00ed varianta. <strong>\u010ce\u0161i maj\u00ed v tomhle zvl\u00e1\u0161\u0165 divn\u00e9 n\u00e1vyky<\/strong>. Na\u0161e filosofie je, \u010d\u00edm zelen\u011bj\u0161\u00ed ban\u00e1ny, t\u00edm \u010derstv\u011bj\u0161\u00ed a lep\u0161\u00ed. \u010c\u00edm je n\u011bco zralej\u0161\u00ed, t\u00edm zka\u017een\u011bj\u0161\u00ed a hor\u0161\u00ed to podle n\u00e1s je.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #000000;\">Tak to ale nen\u00ed. Nezral\u00e1 zelen\u011bj\u0161\u00ed raj\u010data a brambory obsahuj\u00ed jedovat\u00fd solanin, kter\u00fd je ve v\u011bt\u0161\u00edm mno\u017estv\u00ed dokonce smrteln\u00fd. Tak\u017ee si p\u0159esta\u0148me myslet, \u017ee \u010d\u00edm mlad\u0161\u00ed, t\u00edm lep\u0161\u00ed. Ka\u017ed\u00e1 kvalita si vy\u017eaduje spr\u00e1vn\u00fd \u010das zr\u00e1n\u00ed.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #000000;\">Co se t\u00fdk\u00e1 mra\u017een\u00e9ho, <strong>pozor jen na glazovanou mra\u017eenou zeleninu<\/strong>, ta u\u017e pro\u0161la teplotn\u00edm zpracov\u00e1n\u00edm. To nechcete.<\/span><\/p>\n<h2><span style=\"color: #000000;\"><b>Kva\u0161en\u00e9 je z\u00e1zrak<\/b><\/span><\/h2>\n<p><span style=\"font-weight: 400; color: #000000;\">U konzervace mrazem se jen sna\u017e\u00edme zpomalit rozkladn\u00e9 procesy. U kva\u0161en\u00ed naopak potravin\u00e1m n\u011bco p\u0159id\u00e1v\u00e1me. Nech\u00e1me je kontrolovan\u011b rozkl\u00e1dat <strong>pomoc\u00ed \u201ehodn\u00fdch\u201c bakteri\u00ed<\/strong>. Je to tedy p\u0159idan\u00e1 hodnota. Na za\u010d\u00e1tku p\u0159\u00ed\u0161ern\u00fd z\u00e1pach, ale jak si na to jednou zvyknete, nem\u016f\u017eete p\u0159estat. \u010ce\u0161i zvykl\u00ed na mdlou evropskou kuchyni maj\u00ed probl\u00e9m s p\u00e1livost\u00ed, ale \u010dasto je to t\u00edm, \u017ee do toho <strong>nesm\u00edte pou\u017e\u00edvat b\u011b\u017en\u00e9 kuchy\u0148sk\u00e9 \u010dili<\/strong>, ale koupit si spr\u00e1vn\u00fd korejsk\u00fd chilli pr\u00e1\u0161ek (n\u011bkdy se mu \u0159\u00edk\u00e1 chilli mouka nebo vlo\u010dky), kter\u00fd je velice jemn\u00fd a ani ve velk\u00fdch d\u00e1vk\u00e1ch nem\u00e1 nep\u0159\u00edjemnou \u0161tiplavost. Z \u010desk\u00fdch v\u00fdrobc\u016f nen\u00ed \u0161patn\u00e9 <\/span><a style=\"color: #000000;\" href=\"http:\/\/vitovokimci.cz\/\"><span style=\"font-weight: 400;\">V\u00edtkovo kim\u010di<\/span><\/a><span style=\"font-weight: 400;\">, <strong>naopak nem\u00e1m r\u00e1d<\/strong> v\u00fdrobek od firmy I Love Hummus. \u00dapln\u011b tam chyb\u00ed chu\u0165 umame (houby nebo ryb\u00ed om\u00e1\u010dka), je v tom nejsp\u00ed\u0161 to \u0161patn\u00e9 \u201e\u010desk\u00e9\u201c \u010dili, mrkev, je to rozsekan\u00e9 na mal\u00e9 kousky atd. Pokud ale chcete oby\u010dejn\u00e9 \u010desk\u00e9 kysan\u00e9 zel\u00ed s trochu pikantnosti, je to na v\u00e1s.\u00a0<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">N\u00e1vody, co v\u0161echno se d\u00e1 fermentovat, najdete na serveru <\/span><a style=\"color: #000000;\" href=\"http:\/\/zvlaseno.cz\"><span style=\"font-weight: 400;\">zkvaseno.cz<\/span><\/a><span style=\"font-weight: 400;\">, nau\u010d\u00ed v\u00e1s tu zkvasit i kafe! Samoz\u0159ejm\u011b, m\u016f\u017eete si koupit u\u017e p\u0159ipraven\u00e9 kl\u00ed\u010d\u00edc\u00ed sm\u011bsi, ale ty jsou <strong>v\u011bt\u0161inou zbyte\u010dn\u011b drah\u00e9.<\/strong> Kdy\u017e si koup\u00edte kilo mungo fazol\u00ed, \u010do\u010dku nebo \u0159e\u0159ichu, vysta\u010d\u00ed v\u00e1m to na rok a je to za p\u00e1r korun. Jen\u017ee probl\u00e9m je v u\u017e na za\u010d\u00e1tku zm\u00edn\u011bn\u00e9 sterilit\u011b potravin dostupn\u00fdch v obchodech. V\u0161echno se dnes n\u011bjak upravuje, a tak <strong>i sem\u00ednka z bio obchodu jsou \u010dasto mrtv\u00e1<\/strong>. Mus\u00edte zkou\u0161et a doufat. Kupujte v\u00fdhradn\u011b bio a skladujte v chladni\u010dce.<\/span><\/p>\n<h2><span style=\"color: #000000;\"><b>Su\u0161en\u00e9 je skv\u011bl\u00e9<\/b><\/span><\/h2>\n<p><span style=\"font-weight: 400; color: #000000;\">Dnes jsme tak odtr\u017eeni od tradic, \u017ee dob\u0159e nezvl\u00e1d\u00e1me ani tak primitivn\u00ed zp\u016fsob skladov\u00e1n\u00ed, jako su\u0161en\u00ed. Ale metodou pokus\/omyl se v\u00e1m to nakonec jist\u011b poda\u0159\u00ed. \u010cesnek ned\u00e1vejte do chladni\u010dky, tam je p\u0159\u00edli\u0161 vlhko. Skv\u011bl\u00e1 jsou su\u0161en\u00e1 raj\u010data (ta such\u00e1, ne v oleji), samoz\u0159ejm\u011b lu\u0161t\u011bniny, ale i su\u0161en\u00e9 maso.<\/span><\/p>\n<h2><span style=\"color: #000000;\"><b>J\u00e1 ale nechci j\u00edst jen zeleninu<\/b><\/span><\/h2>\n<p><span style=\"font-weight: 400; color: #000000;\">Samoz\u0159ejm\u011b, v karant\u00e9n\u011b si porad\u00ed i fanou\u0161ci masa. Zvl\u00e1\u0161\u0165 par\u00e1dn\u00ed jsou sardinky, kde najdete vitamin D i tuky omega 3, kter\u00e9 n\u00e1m jinak dost chyb\u00ed. Sladkosti jako med s propolisem radit snad nemus\u00edme.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #000000;\">A nezapome\u0148te, \u017ee <strong>ani zdrav\u00fdmi potravinami nen\u00ed dobr\u00e9 se p\u0159e\u017e\u00edrat<\/strong>. Ve v\u00fd\u017eiv\u011b jde v\u017edycky hlavn\u011b o mno\u017estv\u00ed. Pokud nem\u00e1te zrovna cukrovku, l\u017ei\u010dka Nutelly v\u00e1m jist\u011b u\u0161kod\u00ed m\u00e9n\u011b, ne\u017e kilo chia sem\u00ednek.
